Flavorful & Easy Shrimp Scampi, Spinach, and Tomato Linguine

Some of my favorite cuisines stems from Italy. I love their use of bold garlic flavors, tomato, and pasta and was inspired to go Global with Gortons Seafood to make this fresh, easy, and delicious Shrimp Scampi, Spinach, and Tomato Linguine.
It pairs the convenience, and authentic flavors of Gorton’s Simply Bake Shrimp Scampi with fresh tomato, and baby spinach sauteed with garlic–because, why not? Garlic makes everything better around here so I love to add it to pretty much all my meals when possible.
If you have not tried Gorton’s Simply Bake Shrimp Scampi, you are missing out! I love how the flavors of their buttery, garlicky shrimp get pretty much “steamed” in the oven-safe bag. Once they are done, you carefully open them, allow the excess steam to escape, and you can pour that perfectly baked, buttery goodness over pasta (or mashed potatoes if you are my sister). However, since I love to really jazz up my 30-minute meals, I added some fresh elements in to make for one delicious supper that Jared and the older kids really loved.
Little Blake is not a fan of shrimp *yet* but I can see him loving it when he is older!
I love how easy baby spinach is to cook with so I often add it to pasta to give an extra flair and iron to plain pasta. I am iron deficient so every little bit helps!
When I was little my mom would mix her pasta dishes up in a stock pot/skillet, and then serve. I find that I myself love to plate the linguine first and then add the Shrimp Scampi, Spinach, and Tomato over each serving. Then, I gently sprinkle on some crushed red pepper flakes for added heat, and some Parmigiano Reggiano.
No shrimp scampi is complete without a healthy sprinkle of aged cheese.
The Italians know what is up when it comes to a hearty meal!
