It isn’t very often that I actually fall in love with a brand, and obsessively feel the need to stock up on it. However, that is the case with Living Now Organic Quinoa Penne by Now Foods. I think the reason I really love the gluten-free, organic, and contains no artificial colors, flavors, sweeteners or hydrogenated oils. Basically, this quinoa pasta is void of allergens, and junk. It is only made with three organic ingredients which are: rice, quinoa and amaranth.
Since starting a clean- eating diet in March gone are the days of white bread, pasta, and processed foods as the norm. With the exception of a cheat meal once a week, I stick with wholesome foods. The less ingredients, the better for foods like pasta which I was kind of missing. I have tried some other brands, but they get gummy, and hard the next day which is really unappealing.
The Living Now Organic Quinoa Penne by Now Foods not only tastes great, but you would swear it was regular white pasta. There is no bitter taste, or grainy texture. It is perfect for pasta, macaroni and cheese, and this Vegetable Quinoa Pasta Salad.
The beauty of pasta salad in the summer is that it is easy to make and can be prepared ahead of time. Lately, I always have veggies chopped, and prepared ahead of time in storage containers. It makes meal planning easy and quick.
For this pasta salad I used summer veggies, broccoli, and some kale. The dressing was made with Bragg’s Apple Cider Vinegar and a little organic mayo, and pepper. The final flavor was fresh, flavorful, and not loaded with junk. I like foods that make me feel alive and this was exactly one of them.

Vegetable Quinoa Pasta Salad
Ingredients
- 1 Box Living Now Organic Quinoa Penne by Now Foods cooked al dente
- 1 pint cherry tomatoes
- 1 large cucumber diced
- 6 whole mini rainbow peppers seeded/chopped
- 1 cup broccoli florets raw
- 1 cups fresh kale chopped
- 1 1/2 cup red onion diced
- 3 tablespoons organic mayo
- 2 tablespoons Apple Cider Vinegar
- pepper to taste
Instructions
- Cook quinoa pasta until al dente, rinse with cold water, and strain. Add pasta to a large bowl. Add in chopped veggies. Sprinkle with pepper to taste. Add in mayo, and vinegar. Stir, and place salad in the fridge for the flavors to meld.

This looks delicious, a great mixture of vegetables and pasta. I am sure my daughter would love this, and it would get her to eat more veggies, and that is a great thing!
