Watermelon Cupcakes-Featuring Betty Crocker Watermelon Cake Mix and Frosting
I have to say, until recently I have never heard of a cake mix or frosting that tasted, and smelled just like watermelon! Yes, it is a bit strange, but I did have the opportunity to try out some Target exclusive watermelon flavored products courtesy of Betty Crocker.

At first glance the product packaging is really cute and screams Summer. I was really intrigued to see how these would bake up. I knew they had a lot of potential to become pretty cupcakes, but would they taste good? Since making decorative cupcakes is a hobby of mine, I set out to make some for friends and family. Our household is mainly gluten free, but I still cook traditionally for others.
I found the instructions for the Betty Crocker Watermelon cake mix to be pretty basic, and similar to their other recipes. However, the watermelon smell was a bit overwhelming. I am much more of a natural flavoring person, and thought this was a bit over board. The mix reminded me of what watermelon gum smells like, and contained little specks of black that were suppose to be the “seeds”.
After my cupcakes were made, and cooled I used a 16 inch piping bag and star tip to decorate them with the Betty Crocker Watermelon Frosting. It was bright green, and also smelled similar to the cake mix. I topped them with a Pink Shimmer Celebration Sixlet to make them even cuter.
I think this watermelon combo tasted ok, but looked amazing. These would make a cute combo for a Summer BBQ cupcakes, or a themed party. They really look so pretty together, but you have to love sweet, watermelon flavored things to truly enjoy them.

My grandkids fell in love with the watermelon cake mix…It is hard to find in stores..I do hope they will put it out again for Christmas.

Hi, I am sorry but I think they discontinued it for the season. You can get the “look” with white cake mix, pink dye, and chocolate chips. I hope this helps?
As for flavor, I am not sure.
