I turned mine into chicken parmesan, but today’s recipe is for crispy, moist chicken cutlets that pair perfectly with sides like fries, mashed potatoes, or veggies. You can even dip this chicken into your favorite sauces like ranch, or honey mustard.

In the past, I have made this recipe with mayonnaise, but that added so many extra calories and fat to an already possibly indulgent meal. I love how Delta® Greek Yogurt provides a nice binder layer, of moisture, and flavor. The end result is a flavorful chicken cutlet that my kids actually enjoy!

- Butter crackers
- White meat chicken sliced thinly into cutlets
- Delta® Greek Yogurt (Plain, 5% Fat)
- Onion & garlic powder
- Salt & pepper to taste
- Parmesan cheese shreds
- Fresh Parmesan cheese
How to Make Cracker Crusted Chicken
The first thing to keep in mind is that you want your chicken to be sliced thinly. I typically slice a chicken breast 4 times lengthwise to get ultra thin cutlets.
You do not need a food processor to get your cracker crumbs ground up. I prefer to use clean hands to squeeze them into crumbs, so they have some texture to them.
Once the crackers are crushed, add them to a shallow bowl with the spices and Parmesan cheese, mix. Prepare a baking sheet with parchment paper.
Add the Delta® Greek Yogurt to a bowl. Dip each cutlet into the yogurt and then into the cracker and cheese mixture.
Place coated chicken cutlets on your baking sheet. Once they are all coated, bake them in the oven at 375 degrees Fahrenheit for 30 mins. The internal temperature of the chicken should be 165 degrees Fahrenheit.
Serving Suggestions
These cracker coated chicken cutlets can be made into meals like chicken parmesan by adding sauce and mozzarella cheese at the end of baking. Simply return the chicken to the oven for an additional 7-10 minutes or until cheese is bubbly and melted.
You can serve these cutlets with your favorite dipping sauce, in a sandwich, or on top of a salad. We enjoyed ours with mashed potatoes and broccoli.

Cracker Crusted Chicken with Greek Yogurt
Equipment

Ingredients
- 1 ½ pounds white meat chicken sliced lengthwise into thin cutlets.
- ¾ cup Delta® Greek Yogurt Plain, 5% or 0% Fat
- 2 sleeves butter crackers crushed into small pieces
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ½ teaspoon ground black pepper
- 1 tablespoon fresh parsley chopped
Instructions
- Preheat oven to 375° Fahrenheit.
- Slice white meat chicken pieces into 3 cutlets lengthwise.
- Crush crackers into a shallow dish. Add spices to the bowl, and Parmesan cheese; mix well.
- Dip chicken cutlets into Delta® Greek Yogurt.
- Dip coated cutlets into cracker mixture and coat all surfaces.
- Add cutlets to a parchment-lined baking sheet and bake for 30minutes or until internal chicken temperature reaches 165° Fahrenheit.
- Remove chicken from oven and sprinkle with freshly chopped parsley. Enjoy with your favorite side or dipping sauce.
