Grilled Chicken Salad Filled Cucumber Cups Recipe
I don’t know about you, but I love to make food fun for my kids. That is partly why I made them these super cute Grilled Chicken Salad Filled Cucumber Cups. these would make excellent appetizers, or finger foods if you made them a bit smaller. They are a low carb, gluten free meal/snack/appetizer, and are soo incredibly tasty!
Grilled Chicken Salad Filled Cucumber Cups:
- Ingredients-makes 9 cups
- 3 Large Garden cucumbers
- 1 pound of chicken salad ~I grilled my own, and shredded it up. I add 1/3 cup Kraft Mayo to one lb of chicken as well as some chopped celery and onion. My best suggestion is to cater this recipe to the amount of chicken you are using. By grilling your chicken, you are achieving a whole other flavor element that will have you wanting more!
- Cherry tomatoes for the toppers
Directions:
*See above for chicken salad instructions
Wash, and peel your three cucumbers-cut off the very ends
As even as possible cute your cucumbers into three even pieces
Using a melon baller, or knife, carefully scoop out about an inch inside the cucumbers
Fill them with the chicken salad mix {tuna would also work}
Top with a cherry tomato
Repeat until they are all complete. Our Grilled Chicken Salad Filled Cucumber Cups Recipe would make a great Summer Treat that everyone is sure to enjoy!
