Quick and easy canned chicken salad recipe! Learn how to make a delicious and versatile meal in minutes with simple ingredients. Perfect for sandwiches, salads, and more!

Wondering what to turn the cans of chicken in your pantry into something delicious? You’re not alone! Canned chicken is a pantry staple, but often overlooked for its potential. If you’re craving a quick, flavorful meal without the fuss, look no further. This easy canned chicken salad recipe transforms simple ingredients into a satisfying dish perfect for sandwiches, wraps, or a light lunch.
Chicken salad is one of my family’s favorite meals. It is a great way to use up leftovers, but the way chicken prices are so expensive (these days) there haven’t been many leftovers around here. Thankfully, canned chicken is readily available and surprisingly tasty. I love how it features tender, flaky white meat with lots of flavor. I always try to keep at least a handful of cans on-hand for quick and easy protein that is still affordable.

Chicken Salad Ingredients
- Canned Chicken: Readily available source of shredded chicken. I used the Great Value brand of chicken salad.
- Celery: Adds color and crunch to the salad.
- Red Onion: Adds color and sharp bite for a balance of flavor.
- Green Onion: Contributes a milder onion flavor and color.
- Mayonaisse: This binds the salad and creates a creamy flavor and texture.
- Dijon Mustard: Provides a tangy kick to the flavor.
- Italian Herbs: I used dehydrated, fresh Italian herbs from my garden. You can use jarred ones which also taste good.
- Spices: Garlic powder, onion powder, ground black pepper, and paprika add a depth of flavor and mesh together nicely for a tasty flavor profile.

How to Make Canned Chicken Salad
Prep the Chicken: Drain the liquid from the canned chicken, rinse if desired, and remove any visible fat.
Combine Ingredients: In a large bowl, add the drained chicken, diced celery, red onion, green onion, Dijon mustard, mayonnaise, and all spices.
Mix Thoroughly: Use a spatula or spoon to combine all ingredients until well-mixed.
Chill: Cover the bowl tightly and refrigerate for at least one hour to allow flavors to meld.
Serve: Serve on greens, bread, or with crackers. Enjoy!

Recipe Variations
- Sweet and Fruity:
- Add diced red grapes or apples for a touch of sweetness and a pleasant crunch.
- Dried cranberries or raisins also add a sweet and chewy element.
- Spicy Kick:
- Incorporate a dash of hot sauce, sriracha, or cayenne pepper for a fiery twist.
- Finely chopped jalapeños or pickled jalapeños can also add a spicy bite.
- Mediterranean Style:
- Mix in chopped sun-dried tomatoes, Kalamata olives, and crumbled feta cheese.
- A drizzle of olive oil and a sprinkle of oregano will enhance the Mediterranean flavors.
- Asian Inspired:
- Add shredded carrots, edamame, and a splash of sesame oil.
- A touch of soy sauce or rice vinegar can provide an umami boost.
- Curry Chicken Salad:
- Add curry powder, a touch of turmeric, and some raisins for a fragrant and flavorful variation.
- “Loaded” Chicken Salad:
- Adding crumbled crispy bacon bits, and shredded cheddar cheese.

Ingredient Substitutions and Additions:
- Mayonnaise Alternatives:
- Replace some or all of the mayonnaise with Greek yogurt for a lighter, tangier version.
- Avocado can also be mashed and used as a creamy and healthy alternative.
- Crunch Factor:
- Add chopped nuts like pecans, walnuts, or almonds for a satisfying crunch. Toasting the nuts beforehand enhances their flavor.
- Water chestnuts or bell peppers also provide a crisp texture.
- Herbs and Spices:
- Experiment with different herbs like fresh dill, parsley, or chives.
- Add a pinch of garlic powder, onion powder, or paprika to enhance the savory notes.
- Pickle Variations:
- Explore different pickle types, such as dill, sweet, or bread and butter pickles, to adjust the tanginess and sweetness.

Storing
Store your chicken salad in an airtight container to keep it fresh. It will also keep your fridge from smelling like the strong flavors of onion. Properly stored canned chicken salad will generally last for 3 to 4 days in the refrigerator.

Great basic recipe. I didn’t have celery so I omitted that. I also used finely diced yellow onion instead of green. Recipe turned out great.
