March has come in like a lion! If you are a New Englander like me, chances are you are sick of the snow and ready for that warm, spring air! That is why I enjoy celebrating *almost* spring holidays like St. Patrick’s Day.
St. Patrick’s Day is a day I have always loved since a child. I would always have parties in school where my mom would have me bring in green punch or shamrock cookies. My mom was the type that did not bake, but had no issue buying store-bought goodies for classroom parties.
If you are the type that prefers low-hassle party treats, then these cupcakes are for you! Just a few snips of the scissors, and a few sweet additions later and you will have these little rainbow cupcakes ready to go!
Materials needed for St. Patrick’s Day Rainbow & Coin Cupcakes
- 12 count (or more) vanilla frosted cupcakes
- Chocolate gold coins
- Mini marshmallows
- Rainbow candy belts
- Gold peanut butter cups or Rolos *optional
- Gold edible glitter *optional

Materials
- 12-count Vanilla Frosted Cupcakes
- 1 Package of Rainbow Candy Belts
- Chocolate Gold Coins
- Mini Marshmallows
Tools
- Scissors
Instructions
- Arrange all your cupcakes out of the package.
- Cut rainbow candy belt into 4 inch strips.
- Insert candy belt across the cupcake to form a u-shaped loop.
- Add 3 mini marshmallow clouds to each side
- Insert one gold coin
- Place cupcakes on a tray, or cover them up for enjoying-that's it!
Notes
You can also use chocolate Rolos and gold shimmer to make little pots of gold for these. To adhere the candy glitter, use a dab of chocolate frosting.
As you can see, making these cupcakes is really super easy!!! Plus, they will win you mega points with the kiddos or little leprechauns! I am admittedly not the best cake decorator so simple cupcake IDEAs like these save the day!
