These muffins are best enjoyed the same day when they have a crisp to them. However, they can be stored for up to 4 days at room temperature.

Please note: These muffins can also be baked in a standard sized muffin tin. However, they do not bake up super fluffy as they are a dense muffin.
This recipe makes twelve standard sized muffins or 24 mini muffins which we prefer to bake up.
