Broccoli & Cheese Stuffed Potato recipe.
Broccoli & Cheese Stuffed Potato ingredients:
- 1 medium (6-oz) potato, baked with skin
- 1/3 cup shredded low-fat cheddar cheese
- 1/2 cup cooked chopped broccoli
- 2 Tbsp. light sour cream
- Pinch of salt substitute
Slice washed russet potato down the middle, cover with a damp paper towel, and cook in the microwave on high for 5-6 minutes. Split baked potato with a knife. Stuff with broccoli, cheese, and sour cream. Sprinkle with salt substitute.
This recipe made such a lovely lunch and was super filling. It was amazing how delicious this stuffed potato truly was even though it was not how I would admittedly normally make it. Eating a diabetic friendly lifestyle is actually easy and beneficial because you are eating less sugar and fats.

My mom is a diabetic and drinks Glucerna all the time. She really likes it :)
This is a great recipe! I have a terrible time getting my man-child husband to eat anything green. I think this might work!
A shake for diabetics? My dad would love this. I will check this out for him.

Oh man I love baked potatoes. Especially when they’re loaded with all that good stuff. While I was in school we had to try the Glucerna and it’s actually really yummy!

Both of these look very good! The shake sounds yummy and that stuffed potato looks amazing! My father and father in law are both diabetics. I’ll have to let them know about these shakes.
