You might love chocolate covered strawberries, but have you ever tried Cheesecake Stuffed Strawberries? We had the pleasure of trying them locally and fell in love. These stuffed strawberries are easier to make than you think and make the perfect inexpensive sweet gift idea.

Looking to surprise your sweetie with a yummy, edible gift? Why not try these Cheesecake Stuffed Strawberries? They are pretty inexpensive to make and require common ingredients like cream cheese, graham cracker crumbs and fresh strawberries.
These strawberries are almost fool-proof and can be enjoyed minutes after they are made. They keep for a good 24 hours when stored on a paper-towel lined, covered plate. This cheesecake recipe does not contain eggs and can be eaten “raw” since it is just cream cheese, sugar, and vanilla extract.
Ingredients
*Makes 15 larger sized stuffed strawberries
- 8 ounces of whole fat cream cheese *at room temperature
- 3 tablespoons of confectionery sugar
- 1 tsp of vanilla extract
- 1/3 cup graham crackers crumbs (3 sheets) crushed into fine crumbs
- 15 large berries (or one pint of mixed sized berries)
How to Make Cheesecake Stuffed Strawberries
Wash all your berries carefully and pat them dry.
Remove the stems from each berry.
Using a paring knife, carefully scoop around the stem area of the berry making a hallowed out space. Ours were about half an inch deep.
In a medium-sized bowl, add the cream cheese, sugar, and vanilla.
Cream with a hand mixer until smooth and fluffy.
Add cream cheese mixture to a piping bag or plastic storage bag.
Snip the end off (if applicable) and pipe filling into each berry.
Sprinkle crushed graham cracker crumbs onto the filled berries.
Enjoy right away or store in a paper towel lined container. Make sure the berries are covered. They last up to 24 hours when stored properly. Strawberries tend to naturally “leak” so they cannot be frozen and do not last very long.
You can out these strawberries into cupcake liners for presentation. I used regular and mini sized ones depending on the berry sizes.
