If you’re looking for a fun, cheesy, and creamy seafood appetizer, this shrimp scampi dip is perfection. It is a very rich appetizer, but it is made easier thank to the use for frozen shrimp scampi. The addition of freshly grated mozzarella and Parmesan cheeses really made this appetizer an A+ treat that everyone loved!
Ingredients
Before starting this recipe, you’ll want to verify that you have the following ingredients:
Shrimp Dip
- Shrimp Scampi – We used SeaPak brand Shrimp scampi (2, 12-ounce size boxes). This made for a nice shortcut. We ended up needing two because once cooked down there is much less shrimp, or more butter-style sauce. You will also be reserving some of the sauce to use in this recipe. See the recipe card below for exact amounts.
- Cheeses – We used both freshly grated Parmesan Cheese, and Mozzarella. I think this made for a nice blend of cheese that melted so nicely.
- Sour Cream – This is used to make the dip creamy.
- Mayonnaise – Frequently paired with sour cream in dips, this ingredient works so well with the flavors in this dish.
- Fresh Parsley – Perfect for adding both in the dip as well as on top of the dip for garnishing.
Herbed Artisan Bread Crostini
- Artisan bread – I used bakery-style ciabatta bread for the dippers. I sliced them in 1/4″ thick rounds.
- Butter – Be sure to melt it for brushing on the sliced artisan bread rounds.
- Herbs – I used Italian herbs which is a blend of dried Italian spices in one bottle. If you cannot find this, dried basil, or oregano also work well.
Equipment and Supplies Needed
We used the following equipment and supplies to make this recipe. Items that are optional or can be substituted will be noted.
- Stove & oven – This dip is both prepared partially on the stovetop as well as inside the oven.
- 2 quart baking dish (or slightly larger)- to bake the shrimp scampi dip. I used a slightly smaller one and had instant regrets because it almost bubbled over!
- Baking sheet – If you bake your own bread rounds.
- Medium skillet – to cook shrimp
- Food processor – A nice hack to quickly shred cheese. We used the cheese shredder attachment on our food processor.
- Mixing bowl – You will need a large-sized bowl to mix the ingredients.
- Cutting board & knife – Chop parsley.
- Measuring cup – To measure out any ingredients.
- Pastry brush – If you make your own bread rounds.
Directions
If making your own herbed bread rounds, preheat oven to 375 degrees F. Slice a baguette into 1/4″ inch bread rounds. Brush each with melted butter, and sprinkle with herbs. Bake for 8 minutes on the bottom oven rack. Bread will be golden browned and crunchy; set aside. Reduce oven temperature to 350 degrees F. for the dip.
If using SeaPak Frozen Shrimp Scampi, Add the shrimp to a medium skillet, and heat until butter is melted, and shrimp is no longer grey; about 6-8 minutes over medium heat. Once prepared, reserve 1/4 cup of liquid with the shrimp; discard the rest once cooled in the trash.
Shred the cheeses, and reserve 1/2 cup of each for topping the dip with. Mix together the room temperature cream cheese, mayonnaise, sour cream, parsley, Parmesan, and mozzarella cheese. Add the shrimp, and 1/4 cup of reserved buttery liquid. This will get the dip extra flavor.
Add the dip ingredients into the casserole dish and top with the reserved 1/2 cup each of mozzarella and Parmesan cheeses.
Bake in the oven for 15 minutes or until golden brown and bubbly. Serve right away, warm with bread dippers, or your choice of dipping mediums.
Recipe Tips
This recipe is easy to make if you know the right tips and tricks! Here are my tips for ensuring your KEYWORD comes out perfectly.
Homemade Shrimp Scampi
If you do not want to use frozen shrimp scampi, you can make homemade shrimp scampi. You will need the following:
- 8 ounces of medium shrimp peeled, deveined, and rinsed. Be sure to pat the shrimp down carefully.
- 4 cloves of freshly pressed garlic
- 1 tablespoon of fresh lemon juice
- 1/4 cup of dry white wine
- 1 tablespoon of freshly chopped parsley
- 1/4 teaspoon of red pepper flakes
- 1/8 teaspoon of black pepper
Cheeses
You can use freshly grated mozzarella and Parmesan cheese, or simply buy bagged shredded cheeses. I just love how fresh cheese melts so nicely, but it is really a matter of preference.
Storage
If you want to store your Shrimp Scampi Dip, just follow these easy steps.
Due to the nature of this dip containing seafood and dairy, it will not last too long in the refrigerator. We found that this is safe to store properly in an airtight container for up to 48 hours only. This recipe as written is not freezer-friendly.
